If you ever find yourself in Copperas Cove and you are looking for a quick place to grab some grub, head over to El Corral Restaurant #2! (I have no idea where #1 is.) It is right next to Blockbusters on HWY 190. This place is YUMMY! The only draw back is you can only eat out - drive thru only. Great Authentic Mexican food cooked up fast & not too pricy! They also serve breakfast, so swing for a breakfast burrito the next time you are in Cove! We eat here often & everything on the menu is good!

It's no Coral Island in Thailand, nor is it the white sandy beaches of Saipan. The black mud between my toes kind of freaks me out and the fact that you can't see any part of your body that is in the water makes me shiver, oh and those nasty lake weeds that touch my legs in the water always reminds that JAWS just might be lurking out there waiting to have his next meal.... Disclaimer: I know that JAWS would never be in a lake in the middle of Texas, I know this ~ really I do, but still when that crap touches my legs I want to jump out of the water faster than I jumped in! You see, I grew up in Texas and I lived here when that movie came out. When JAWS came out I was only SIX YEARS OLD (sure, now you are doing the math trying to figure out how old I am...I see you wheels churning). I had no idea how to swim, the only bodies of water I knew were LAKES (I had never been outside of North Texas). JAWS pretty much scarred me for life. I can't believe I even like water now. And yes, I know how ironic it is that I love the ocean as much as I do. So when my niece invited me & the kids (the kid and I?) out on the boat and jet ski with her and her fiancé I thought about saying 'no thank you I don't have the time' or 'there are too many people I need to see', or maybe 'if you promise I don't have to get in lake water'.... Instead I pulled myself up by my boot straps (like that Texas saying?) and said we are all in! (OH GOD, WHAT HAVE I DONE?) So, in summary ~ no, I still do not LOVE the lake even though I would LOVE to get a boat and or jet ski for the family. Yes, I still think there is a slight possibility JAWS might attack me in the lake, (yeah, yeah, I know I should go to therapy) however I show no fear in front of the kids. I learn to swim when I was eleven and practiced swimming FAST. I never watched any of the JAWS sequels. The only way the kids will know their mom is crazy when it comes to lakes is when they read this.
OH, and even though JAWS may not kill me...this Texas heat might..... Here are a few things in the Lone Star State that entertain me.... So I'm a little slow at updating this blog. What can I say, I'm a busy girl. Much more busy than I was in Korea, plus it is summer & every time I go to update, I have someone asking, "can I have milk, can I play on the computer, come wipe my bottom....." aughhh, you get the idea. School starts in 17 days; maybe I will be better at updating then. (Maybe.) So Girl's room was super fun to paint! Yes, this is all paint, no stickers, all free hand baby! It took me two days to complete, but oh so worth it! I started with a few dots..... added a few more..... and then threw in even more.... Once all the dots were done, I added SWIRLS!! How fun is this room?!?! My inspiration was the curtains I had custom made (above). Girl told me exactly what colors she wanted, gave me all sorts of ideas & this is what we came up with together!
I still have quite of bit of work to do but decided to hold off till the kids go back to school. I am going to refinish all of Girls furniture & am still looking for the perfect bedding for her room.....as soon as it all comes together I will post more pictures. |
